GREENS & MANOURI CHEESE FALANIS
Execution
We begin by making the dough and mix all the ingredients for about 10 mins. Then, we put the crust in a mixing bowl and cover it with food membrane/plastic wrap to let it rest for an hour. We continue by seperating the mixture in 120gr portions and flatten it in approximately 2cm pastry sheet. Right after flattening the pastry, use a grillpan or the oven rack to cook it evenly on both sides and let it cool.
Stuffing
Add some olive oil in a pan and bring it to temperature in order to stir-fry the scallion with the leek until it is well cooked. Also, add the chard and after 5 minutes the spinach and stir until all the ingredients are cooked. We add sour trahana pasta (raw) and some water if necessary. When cooked, add the greens such as chervil, dill etc.
After mixing all the ingredients and regulate the flavour with salt and pepper. Let the mix cool down.
Presentation
Use a pitta bread and fill it with some stuffing. Crumble the Manouri cheese and cook it in the oven. When ready, add the mini arugula and complete it with some olive oil dressing.
